Recipe: Air Fryer Spice-Crusted Venison Roast

Air fryers have revolutionized home cooking, offering a healthier way to achieve tender, flavorful results without deep frying. The air fryers are like convection ovens that circulate hot air to produce a satisfying seared texture while using little to no oil. With a variety of sizes and features available, getting to know your specific model is as simple as learning any new kitchen appliance, where trial and error provides insight into timing and temperature.

Juicy

Venison is ideally suited for air frying, especially tender cuts such as the loin, inside or center round or top sirloin. With a flavorful spice rub and careful temperature control, the result is a juicy roast with a beautifully crisp crust.

Ingredients

  • 2 lbs. venison roast (loin, inside, or center round)
  • 2 Tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp ground mustard
  • 1 tsp dried oregano
  • 1 tsp cracked black pepper
  • 1 tsp kosher salt
  • ½ tsp brown sugar

Directions

  1. Preheat the air fryer to its highest setting, usually 390–400°F, to help create a flavorful crust.
  2. Combine garlic powder, onion powder, smoked paprika, ground mustard, oregano, pepper, salt, and brown sugar in a bowl.
  3. Pat the roast dry with a paper towel and rub the surface evenly with olive oil, then coat thoroughly with the spice mixture.
  4. Place the roast in the preheated air fryer and cook for 15 minutes to form a seared outer crust.
  5. Reduce the temperature to 360°F and cook for another 15 minutes, turning the roast halfway through.
  6. Check internal temperature, look for 135°F for medium-rare or 145°F for medium, and add more time as needed. Smaller roasts may take less time, so check the temperature when turning it.
  7. Remove from the air fryer, wrap in foil, and let rest for 10–15 minutes before carving.

Tip: Most venison roasts take about 20 minutes per pound, but always rely on a meat thermometer for best results.
