Recipe: Drunken Duck Skewers

Holidays are for the birds. … Eating them, that is. If you’re looking for a great appetizer this year that is sure to quiet your in-laws long enough to grab a plate of your own and make it to the basement unseen, break out the duck breasts and try this easy recipe.

Ingredients:
• Wooden skewers
• 8 boneless, skinless duck breasts
• ¼ cup fresh lime juice
• Lime zest
• ¼ cup tequila
• 2 shallots, finely chopped
• 2 garlic cloves, minced
• 2 teaspoons ground cumin
• Salt and pepper
• ½ cup olive oil
• ½ teaspoon sesame oil

Directions:
1. Cut duck breasts into thumb-sized cubes.
2. Thread the duck cubes onto wooden skewers. (Make sure to soak skewers in water for at least 30 minutes prior to adding the duck to prevent them from burning during cooking.)
3. Lay prepared skewers in a single layer in a shallow dish or baking pan.
4. To make marinade, whisk together the lime juice, tequila, shallots, garlic, cumin, salt and pepper and lime zest to taste. Slowly add oils, whisking until completely blended.
5. Pour the marinade over the duck skewers and marinate for 30 minutes to 4 hours in the refrigerator (the longer the better).
6. Preheat barbeque to medium heat.
7. Grill duck skewers 2 to 3 minutes on each side and serve hot.
