From the Cookbook: Venison Fried Rice

Delicious though it may be, venison doesn't always have to be the centerpiece of your wild game infused meal. With the proper approach it can just as easily be made into a tasty side dish, like the latest offering from the NRA Members' Wild Game Cookbook: Venison Fried Rice.

Dig out some leftover venison (or any game meat, really) and add a little flavor to your rice with this recipe.

Venison Fried Rice
Following recipe taken directly from the NRA Members' Wild Game Cookbook, Second Edition

Ingredients:
• ½-1 pound ground venison
• 1 cup chopped broccoli
• ½ cup chopped green pepper
• ½ cup sliced mushrooms
• ½ cup chopped onion
• ¾ cup bean sprouts
• 3 tablespoons peanut butter
• 2 tablespoons cooking oil
• 3 cups cooled cooked rice
• 4 tablespoons soy sauce
• ¼ teaspoon powered ginger
• ½ teaspoon garlic powder
• dash of salt
• 1 egg, beaten

Saute vegetables in cooking oil, in a large skillet, until cooked but still a little bit crunchy. Add soy sauce, ginger, garlic powder and pepper. Clear a space in the middle of the pan and add egg. Stir until egg is cooked and then combine with vegetables. Add peanut butter. Add ground venison. Stir until cooked through. Add cooked rice. Stir until heated through.
