From The Cookbook: Microwave Bluegrass Duck

Microwaves: used for popping popcorn, heating up cold coffee and melting butter. So many uses for this little machine, yet you probably never thought to cook an entire wild-game dish in it. Our member's have all sorts of creative quick-cooking recipes, which they share with us. Microwave Bluegrass Duck

The following recipe is taken directly from the NRA Members' Wild Game Cookbook, Second Edition. To buy your own copy of the cookbook, visit the NRA Program Materials Center.

Ingredients

•    1 wild duck
•    Allegro marinade or a suitable wild-game marinade
•    2-3 onions, cut in quarters
•    1 can chicken broth
•    1/2 teaspoon each: sage, garlic powder, and thyme
•    salt and pepper to taste
•    3 strips of bacon
•    2 quart microwave covered dish

Skin one wild duck and marinate for eight hours, turning occasionally. Remove from marinade. Place one half the onions inside duck and place breast side up in dish. Place the rest of the onions around the outside of duck and add chicken broth. Sprinkle seasoning over meat. Place bacon strips over duck, cover and cook in microwave, on high, for 21 minutes (turning dish one fourth turn every seven minutes) or until done. Remove, slice and serve with broth as a gravy.
