From the Cookbook: Venison Swiss Steak Dinner

With Valentine's Day right around the corner, men and women alike are planning romantic meals for that special someone. Why not woo your way into their heart with a wild-game dish—and what better way than with a tried-and-true venison steak recipe? The NRA Member's Wild Game Cookbook, Second Edition is chock-full of great recipes to test on your partner. If meat-and-potatoes often describes your table fare, then this one is for you.

Venison Swiss Steak Dinner

The following recipe is taken directly from the NRA Members' Wild Game Cookbook, Second Edition. To buy your own copy of the cookbook, visit the NRA Program Materials Center.

Ingredients

• 1 1/2 pounds venison steak (round or rib eye)
• 1 medium onion, sliced
• 1 can french onion soup

Cut meat into 1-inch thick slices. Pound lightly with meat mallet, and coat with a mixture of:

• 1 cup flour
• 1/2 teaspoon garlic powder
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper

Brown in hot oil in an iron kettle. Add onion slices, pour in soup and add 1/2 can of water. Cover and cook in a slow oven at 300 degrees for 3-4 hours. Serve with mashed potatoes, using meat sauce for gravy. Include either green beans or corn as a side.
