Try morel mushrooms you pick in the spring or porcini (Boletus edulis)that grows in the moutains of the west in fall. DO NOT pick mushrooms you are not 100% sure what they are or you could die painfully. Blue grouse in cream of chanterell sauce is to die for (a French chef may kill you for it). Dried porcini and fresh chanterelles are sometimes sold in gormet stores.
