Hunting Camp Venison Stroganoff

The following recipe is taken directly from the NRA Members' Wild Game Cookbook, Second Edition. To buy your own copy of the cookbook, visit the NRA Program Materials Center.

Ingredients


  • 1 1/2 pounds venison ham steak, sliced thin approximately 1/8 inch thick and 1 1/2 inches long

  • 1/4 cup cooking oil

  • 1 cup mushrooms, sliced (fresh if available)

  • 1 cup onion, chopped

  • 1 cup cream of mushroom soup, undiluted

  • 1 cup flour, seasoned with salt and pepper

  • 1 package beef flavor instant broth or beef bouillon cube

  • 1 cup water

  • splash red wine (if desired)

  • garlic salt (or powder), salt and pepper to taste

  • 1/2 to 1 cup sour cream


Place seasoned flour in a bag and shake meat until each piece is coated. Save flour for thickening if needed. Brown venison in a dutch oven with a small amount of oil. Remove meat and sauté chopped onion and mushrooms in remaining oil. Return meat to dutch oven and add mushroom soup, beef flavor packet (or dissolved bouillon cube), water and seasoning, and bring to a boil. Stir to blend all ingredients. Boil for three to five minutes, reduce heat to just under a boil, add a splash of red wine and additional water as required for a consistency that will cook without sticking. Cook covered, stirring occasionally, for about one hour or until meat is tender. Remove from heat, stir in sour cream. Serve on toast points.

Note: This can be served on rice or noodles, but for some reason it tastes much better on toast. Enlarge the recipe into a big pot size for leftovers or make it ahead for it seems to be even better the next day.

Yield: Feeds 4 hungry hunters
