Dave Campbell is one of the hosts of “Game Kitchen Cowboys” on Along with Jim Zumbo, he will be bringing you recipes and tips on wild game gathered from a combined experience in hunting and preparing dishes that spans more than 100 years.

Campbell began his hunting career with a spear off the southern California coast in the late 1960s. It did not take long for him to graduate to the gun on land. A self-taught hunter, he began with game birds and waterfowl and went on to start hunting big game after moving to Wyoming for the first time in the late ’70s.

During the past 40 years Campbell has developed a wide variety of skills tied to the outdoors, from handloading to trapping and gunsmithing. He has led the life of a gypsy with dozens of jobs ranging from a hunting guide to a machinist and eventually a magazine editor.

Campbell is the founding editor-in-chief of NRA’s Shooting Illustrated magazine. In 2006 he also edited the iconic book of terminal ballistics, "Rifle Bullets for the Hunter—A Definitive Study." He returned to his beloved Wyoming in 2007 as a freelance writer, though he usually refers to himself now as a “recovering editor.” Campbell’s penchant for hunting has taken him all over the U.S. and much of Canada to Europe and Africa.

A lifelong bachelor, he says that he was forced to cook for himself, and like most of his skills, he is a self-taught chef. He adds that it never occurred to him to use a cookbook until about 10 years ago. Campbell was cooking over open fires and burying Dutch ovens 35 years ago, calling the Dutch oven “the original crock pot.” He rarely eats domestic meats, except when dining out and says he prefers wild meat to domestic.

Today Campbell divides his time between writing and farming his place along the Shoshone River in Wyoming.
